We warmly invite you to an intimate culinary ritual. This private dining experience explores the brief moment of late spring when ingredients reach their peak just before the season shifts.
In collaboration with SPACS ART the evening unfolds within a curated exhibition setting where food and art exist in quiet dialogue. We propose an experience where each course becomes part of the spatial environment. Set among the works the dining format invites a slower and more attentive way of tasting allowing the senses to wander freely between the plate and the canvas.
The menu centers on what is available now including tender greens early strawberries rhubarb and young alliums. These ingredients exist within a narrow window between spring and early summer. Smoke runs quietly through the courses while fermentation gently reshapes familiar flavors shifting them into something more structured and unexpected. Each dish is intentionally reduced to a few elements allowing clarity precision and depth to naturally emerge.
Minimal yet intentional the evening invites guests to experience dining not as a fixed format but as something that unfolds gracefully over time held delicately between season material and meaning.
About Rephael Russo
Chef Rephael Russo’s practice sits beautifully between season and memory. Drawing from a heritage spanning Israel Morocco Turkey and Egypt and shaped by his time at Eleven Madison Park his cooking distills ingredients to their essence while building depth through fermentation fire and time. Under PARDÉS his private dining practice reflects a personal culinary language that moves gently between place and identity. Rooted in tradition yet open to reinterpretation the experience becomes less about presentation and more about perception where flavor memory and space quietly intersect.
